Pork Schnitzel Pasta

Ingredients

4 Large medium thick pork chops.
1 Medium to Large onion, sliced small
4 garlic cloves, minced
8-10 mushrooms, sliced
250 grams of penne gluten free or regular pasta
1/3 cup of Sour cream
1/2 cup of gluten free or regular flour
Half tea spoon of garlic powder
Tea spoon of Vegeta
Half of tea spoon of prepared mustard
3 Tea spoons of Salt, divided
Half tea spoon of Black Pepper
Half cup of Olive oil
4 Table spoons of lard, for frying
(Substitute olive oil if you don’t have lard)
1/2 cup of white wine
1/2 cup of water


Directions

In a small bowl, mix pepper, garlic powder and Vegeta. Season the pork chops, with the spice mixture on both sides, cover in some olive oil and let rest for 20-30 min.
Dice onion into small squares, set aside.
Slice mushrooms into thin slices, set aside.
Prepare a large frying pan by adding lard, and warming it to cooking temperature (medium heat), while lard melts.
In a large pot, heat water for pasta along with two teaspoons of salt, and bring to a boil.
Flour only one side of the pork chops, and set into the pan once at the cooking heat, floured side up at first.
Wait until it sears up, then flip. Turn the heat down to medium low, cook the chops until they’re finished cooking. Once cooked, pull them from the pan, set aside in a bowl, cover to reserve the heat (or place in oven on keep warm setting). Do not clean the pan, reserve the fat in this pan.
Add sour cream, mustard, water, and wine to a bowl and whisk it until smooth.
In the pan that the pork chops were cooking in, add chopped onions, start to sauté, once the onion is translucent (5-6 minutes), add sliced mushrooms & garlic, cook for 3 minutes or so), then stir in whisked sour cream, mustard, water, and wine mix to the pan so it lifts up all that flavour up from the pan, and simmer for 2-3 minutes.
Meanwhile, cook the pasta to al dente, according to package directions, drain, set aside.
Once the sauce is done simmering, stir the pasta into the sauce.

Note

Serve on a large plate, pork chop with pasta as side dish.
